Oh man. I want more of these just thinking about this recipe! These are so tasty and so simple to make! This recipe will give you dense dumplings with a crispy edge.
For 8 dumplings, you will need:
- 5 tablespoons semolina flour
- 1 teaspoon dried sage
- 1 tablespoon olive oil
- 1 egg
- 4 tablespoons butter
- 4 leaves of fresh sage
- Parmesan cheese to taste
Combine all of your ingredients in a bowl and stir together until it forms a dough. If you want fluffier dumplings, combine the wet ingredients first, then whisk the flour in.
Heat 2 tablespoons of butter over medium heat until melted. Then, drop your dough by the spoonful into the pan. Cook for two minutes on each side. Remove the dumplings from the pan and set onto a paper towel. Tent with foil.
Add the remaining two tablespoons of butter to the pan along with the sage leaves. Swirl until the butter is browned and the sage is crispy.
Serve the dumplings in a shallow bowl, topped with brown butter, sage, and parmesan.
