Rhubarb Syrup



First, I have to apologize for the pictures this post.  I'm a little limited on kitchen locations since we've gutted ours!  We're getting new counters!  I can't wait to show you the before and after pictures.  But for now, we'll have to make do with stove-top shots :)

The other week, I was at a baby shower and had the most delicious rhubarb bellinis!  Rhubarb syrup and champagne made for such a tasty cocktail, I had to get the recipe and share it with you!

You will need:
  • 4 cups chopped rhubarb
  • 1 cup sugar
  • 1 cup water
Combine all the ingredients in a pot and bring to a boil.  Simmer until the rhubarb is soft and the liquid is thickened.
It will be much much mushier than this... I just couldn't get a good picture because of all the steam!

Strain the mixture through a metal strainer. 

Put the chunks of rhubarb in a jar - it's great on top of toast!

Pour the syrup into another jar and use as a yummy and unique drink mixer!

    1. Actually, not all that off topic- the leftover rhubarb strained out of the syrup is my new favorite toast topper! Other than that, jams and jellies haven't been an area I've gotten into, but I will rifle through Granny's recipe box... :)

    1. Rhubarb is typically a little bit tart, so that's part of the reason this syrup recipe adds sugar. Also, a lot of people will combine rhubarb and strawberries to get a little bit of sweet with the tart. It's so good, though! :) I hope you get a chance to try it!

  3. This is a very unique recipe. I have never heard or tried rhubarb:-) But very intrigued now:-). I love all your recipes. Would be cool if we lived close to each other. I promise to eat and drink everything you cook:-)
