Cracker Pie


Happy Friday!  I'm so happy; the weather is finally warm here in Minnesota and I'm almost done with my night class!  I am definitely looking forward to this weekend- do you have any plans?

Today, I have a Granny recipe to share with you.  It's been a while since I made something of hers, and this was yummy like all the rest!

You will need:
  • 3 eggs
  • 10 saltine (soda) crackers, crushed
  • 1 cup chopped walnuts
  • 1 cup sugar
  • 1 teaspoon vanilla
  • A dash of salt
  • 1 can sweetened condensed milk
For the crust, beat the eggs for 10 minutes.  Seriously.  Unless you're wanting a major arm workout, use your Kitchenaid stand mixer or electric beater.

Once you've beaten the eggs into submission, slowly add the sugar (keep the beating going!).

Then, stir the saltines, vanilla, salt, and walnuts into the mix.

Pour the batter into a well greased pie tin or a 9 inch pan.  Bake at 250 for one hour.
Looks like cat puke... tastes much better

For the filling, you will boil your can of sweetened condensed milk, completely submerged, for 2 hours.
Make sure the can stays totally submerged- I had to add water periodically to ensure it was covered
Allow the can to cool completely, then pop it open and spread it on top!

Serve and enjoy- add some Cool Whip if you're feeling adventurous.  :)

This is seriously sweet, but really tasty!
