You will need:
- 1 sweet potato
- 1 sweet yellow onion
- 4-6 ounces goat cheese
- Ready to bake thin crust
- Fresh sage (optional)
- Olive oil for sauteing
Pour a small amount of olive oil into a frying pan and heat over medium-high heat. Add your sweet potatoes and saute until they are softened. If you're ever unsure as to whether you have to precook a pizza ingredient, just look at your pizza crust baking instructions. If the bake time for the crust is significantly shorter than the time needed to cook the toppings, your best bet is to precook it.
Once the potatoes are softened, place them on the pizza crust and add the onions to the pan to cook.
While you're waiting for your onions to soften, crumble your goat cheese on top of the sweet potatoes. Then, top with the onions and a pinch of fresh sage.
Pop it in the oven for 10 minutes, slice, and enjoy!
