Stuffed Portabella Mushrooms


This is a recipe I've added onto from From Ketchup to Chutney.  It's become a supper-time staple that I make almost every week.  John and I both love it!

For 2 servings, you will need:
  • 2 portabella mushroom caps
  • 1/2 bag frozen spinach
  • 3 wedges of Laughing Cow Light
  • 1 pouch microwaveable rice (like Uncle Ben's)
Preheat the oven to 350 degrees.  Wipe down your mushroom caps with a damp paper towel, and scoop out the gills and stems.

Microwave your spinach in a medium bowl according to the package directions.

Stir in the Laughing Cow cheese while you microwave your rice.

Stir in the rice.

Pack each mushroom with the mixture, then bake for 10 minutes on a lightly greased foil lined pan.
