Lemon Strawberry Chia Pudding



I have joined the chia seed bandwagon, friends!  It's high in Omega-3s and adds a great little crunch to salads (my favorite way to eat them).  As much as I like them on salads, I wanted to try them a different way, and this chia pudding fits the bill!

You will need:
  • 2 tablespoons chia seed
  • 1/2 cup water
  • Strawberries (as many or a few as you prefer)
  • Dash of lemon juice and lemon zest
Put the chia seeds and water into an air tight container and give it a shake.  Then, place it in the refrigerator overnight.

The next morning, the chia seeds will be plumped up and gelled together.

Split them between two dishes and top with the strawberries, lemon juice, and zest.

Enjoy!  It's very filling! Do you eat chia seeds?  How do you use them?
