I have joined the chia seed bandwagon, friends! It's high in Omega-3s and adds a great little crunch to salads (my favorite way to eat them). As much as I like them on salads, I wanted to try them a different way, and this chia pudding fits the bill!
You will need:
- 2 tablespoons chia seed
- 1/2 cup water
- Strawberries (as many or a few as you prefer)
- Dash of lemon juice and lemon zest
The next morning, the chia seeds will be plumped up and gelled together.
Split them between two dishes and top with the strawberries, lemon juice, and zest.
Enjoy! It's very filling! Do you eat chia seeds? How do you use them?
mmm this sounds yummy! A great breakfast meal! x

This looks delicious! And thanks SO much for all your comments. I apologize for not getting back to you sooner on your comments. I like the bar idea for my dining room area! I need to start decorating and putting things on the walls, everything is SO bare! :(
