I'm going a little nuts with the monogram stamp... but seriously, who doesn't want monogrammed cookies?? This would be super cute at a wedding or a shower. I also used a little floral stamp on some smaller cookies, just for fun.
Use a good sugar cookie recipe that's billed as a cut-out recipe. These tend to spread less during baking. I used one from Martha Stewart.
Chill the dough before you roll it out for 1 hour or up to over night. Then, roll out the dough and cut it in the shape you'd like, stamping as you go. (Make sure those stamps are good and clean before using!) Freeze the stamped cookies for fifteen minutes before baking. This helps keep the stamp in place even while it bakes.
