Carrot Soup


With fall weather in the air, I'm in the mood for soup more and more often.  I love homemade soup, and this method is so easy.  You can do it with basically any kind of vegetable, and the flavors are wonderful.

For carrot soup, you will need:
  • 2.5 pounds of carrots
  • 1 small onion
  • 4 cups water
  • 1/4 cup heavy cream
While bringing the water to a boil, chop the vegetables.  Once the water is boiling, add the carrots to the pot.

Meanwhile, saute the onion.

When the carrots are tender (about 20 minutes), add the carrots, water, and onion to a blender in batches and puree until smooth.  Make sure you leave a crack in the top of the blender so the heat can escape.

Then, add the cream and blend again

I'll be making this with broccoli next... Enjoy!

  2. This will be good to try once the weather cools down. For some reason I just don't get the appetite to have soup if it's still hot outside.
