Warm Goat Cheese Salad


This couldn't be easier to make.  It's so simple, but so delicious!  And I always feel a little French when I get to eat it :)

You will need:
  • Salad greens (I think baby greens are perfect for this)
  • Goat cheese (a 4 ounce log is the perfect size)
  • 2 1/2 tablespoons red wine vinegar whisked with 1/2 cup olive oil for dressing (this will make more than you need)

Turn on the broiler in your oven.  While it's heating, divide your goat cheese into four patties, placing them on a foil lined baking sheet. 


Once the oven is heated, broil the cheese for about 5 minutes.  It won't be golden brown or bubbly; it will just be warmed.  Serve the goat cheese on a bed of greens and drizzle with your dressing.  Yummy!
